Events are functions of FOUR variables:

Time - event parameters & planning
Space - how much is available at the site
Money - important or not?
Do you have a budget?
Effort - yours or someone else's

These must be acknowledged and prioritized

 Most caterers take your basic suggestions concerning menu and event layout and produce the whole thing.

This is efficient but more often than not you don't get exactly what you are looking for.
It also is the most expensive form of catering as you are literally paying for  everything.
Total canded communication is necessary during the planning of an event. To avoid dissapointment make certain that what you expect will actually take place. Do not just hear what you want to hear - stay on the same page with all those concerned.
